WACKER has developed a solution for masking undesirable flavors. Plant extracts with health-giving properties often carry an unpleasant or bitter aftertaste. This can be a drawback to using them in foods and dietary supplements. The answer lies with CAVAMAX® cyclodextrins. Cyclodextrins are ring-shaped sugar molecules produced by fermentation of starch. They have a lipophilic (fat-loving) cavity in their interior, which can trap specific substances. This allows manufacturers to improve the flavor profile of functional ingredients. For example, health-promoting ingredients, such as green-tea extract can be added to beverages or gummies without the bitter aftertaste. Odors, too, can be masked by complexation with cyclodextrins.
Cyclodextrins can additionally protect sensitive substances against environmental conditions such as light and oxygen, while preserving their desirable properties.
