- Introduction to cyclodextrin in food applications, incl. masking, emulsions, whipping, encapsulation.
- Introduction to α-CD fruit whipping topping application in catering
- Introduction to α-CD in egg-free applications
Seminar objectives
To understand the characteristics and applications of WACKER cyclodextrin. To learn about how α-CD could help in whipping. To understand the application of α-CD in fruit toppings and zero-fat toppings. To learn about α-CD in egg-free cakes.
